Stuffed mushrooms are one of those foods people think are difficult to make. "Life is too short to stuff a mushroom" a phrase apparently coined by Shirley Conran. Stuffing a mushroom does sound difficult, or fiddly but I promise it's not.
This super simple stuffing also makes it easy (and delicious). I just had this as an adult meal for one but my son, a fan of both mushrooms and cheese would love these. Do include the herbs, after all, without them they'd be a two ingredient recipe and that feels a little bit lame!

Spinach and Carrot Cannelloni
Cannelloni is a surprisingly easy dish to cook for one. I had made some tomato and pesto soup the other day and the leftovers were in the fridge. It occurred to me that it would also make a really good pasta sauce.
But I had no cream cheese, no goats cheese, no mince, nothing traditional for a cannelloni filling in the house. So why not vegetables. Why not? You know what, it didn't just work, it was delicious!

Honey Ginger Glazed Tuna
Glazed tuna, a pretty tasty invention, I have a feeling this would work with any kind of robust oily fish. The idea is you add the flavour after the cooking so you don't get issues with the sweet sauce burning in the pan. I enjoyed this and have made it twice already, what's more, fresh or frozen tuna is a great source of Omega 3 (tinned isn't). It's also great to make something like tuna the star of the show when so often it's just bunged in a sandwich as a cheap protein source, although I have to admit my favourite way to have tuna is sushi but with the sweet gingery notes, this still hits the mark.
This isn't mad spicy so should be fine for kids but no babies please as it contains honey.

Nasi Goreng for kids
Nasi Goreng is a spicy Indonesian Fried rice dish based on peanuts. You can do as much of the 'faffing' in this recipe as you like but the basic idea is a paste, rice, some protein and some vegetables. I've made this to be reasonably mildly spiced so kid friendly but up the chilli if just cooking for adults (if you like, it's still blooming tasty as it is!)

Crispy Mackerel Salad
So this was a meal for one and a delicious one at that. It can be difficult to motivate children to eat well but I find my own diet can sometimes be lacking, especially when I'm eating alone. This is a source of omega 3, tasty and delicious, even if you're a touch reluctant when it comes to oily fish. Most importantly though, after a long day, it's quick.

Child friendly Prawn Laksa
Laksa isn't an obvious choice for a preschooler but why not? Most kids I know are fans of prawns and noodles.
I've toned this all down a bit to make it friendly for kids who aren't big fans of spice. Although my son does have more spice in his food than he sometimes realises, last time his Dad cooked him a curry, he was less then keen and apparently ended up eating fish fingers so I went gentle (but noticeable) on the spicing here.
He looked at it. Said "I don't think I like that"
I said "Have you tried a prawn?"
He said "Ooh, no"
Has a couple of bites, then starts eating the mushrooms and noodles. I'm trying to photograph my portion while my stomach is rumbling because it smells pretty good (I'm not one of those food bloggers who cooks to photograph, I cook to eat.)
"Mummy this is yummy"
And indeed it was :-)

Broccoli frittata for babies, toddlers and the whole family
I'm in a frittata place at the moment. Blimey, how middle class does that sound? It shouldn't. Frittatas are so cheap to make and they're a great way to get vitamin D in the diet and also include some hidden vegetables. Great for the reluctant vegetable eater in your life (although perhaps chop up a little smaller so they don't see them!)

Anchovy and Broccoli Pasta
I started this blog to get a bit of myself back while I was on maternity leave but one thing I didn't expect was how it would push me to be more creative with my son's food. One thing I'm very bad at though is cooking just for myself.
If there are other people around I'll go to huge amounts of effort and, don't get me wrong, I do enjoy cooking but I also have 30 hours of work to do in an average day and I kind of like to get some sleep. The amount of times I've slung some oven chips in while cleaning up or doing an exercise video. It's not good.

Soba Noodle Salad
I've not tried this with my son yet but he has similar dishes with hot noodles so I see no reason not to try. Certainly a meal for adults though or older kids and despite the humble ingredients it's substantial enough to make you feel you've really eaten something.
Soba noodles are made with buckwheat. They are often served chilled in Japan so having them in a salad isn't a big leap. Buckwheat if pure, is gluten free. If you are following a gluten free diet, make sure your noodles specifically say 'gluten free' and also check the sauces you're using. Soy sauce would be more authentic but I only had fish sauce which makes this non vegetarian. Substitute for Soy Sauce (or wheat free Tamari) if you prefer.

Lettuce Wrapped Pork for Adults
Another quick and easy recipe, less than 10 minutes to make. Great when the grown ups are hungry once your little one is in bed.
This is based upon a kind of Thai version of Yuk Sung. My brother in law who is an excellent cook used to make this when I came to visit as a student. Much to my shame I didn't ask for the recipe but this is what I remember it tasting like.

Spicy Baked Chicken for Grown Ups
I cooked this for the first time when I was in on my own. My son is in bed by 7pm and I'm not used to eating before his bedtime routine so I try and get something ready for when he's in bed. This often means something quick or something I can sling in the oven while he's having his pre bed milk.
That said, it's still difficult on your own. It's difficult to motivate yourself to eat well and I do prefer to eat reasonably healthy food. This is so easy though that even the least motivated and tired parent will manage it.
